PAUL DOYLE is a coffee producer of Mikava Farm who moved to Colombia to fulfill his coffee-producing dream. He has won several awards and his gentleness never ceases. Whenever I ask, what is the secret of elegant coffee, he always says he mumbled chanting when making coffee, but I know he's based on a very technical approach, such as checking acidity levels for fermentation.
